Found it!

You need to add the element type in front of the class or the CKeditor tollbar does not know what to do with it.
So use

div.products {
width: 50%;
}

instead of

.products {
width: 50%;
}

That will load it in the style drop down menu

Yes you do, I should have checked the obvious one first, I'd assumed that the example one wasn't loading either.

For the pro version we use a different editor which doesn't use that, you can just put .Subtitle { } etc.

How odd, it's working fine here on Chrome and Firefox with ckeditor 4.1.2, I'll have a look at repacking 4.1.2 with that line in it and fire you over a new zip.

It did not work for me in FF, Chrome and IE (Win 8).

I've just emailed you an updated version of the CKEditor with modifications that work for you, assuming that now works for you we'll roll that version into the next release.

It sounds just like the problem isn't which you need divs in place of tables however which you want to make your tables responsive. You can try this by using styling your tables using % as opposed to constant width and styling them to act otherwise at distinct spoil factors.
